Chicken Hash
Ingredients
2 slices white bread (i used the heals of a white wheat loaf)
2 tbsp. parmesan cheese
1 tbsp. light butter
1 onion
1 celery stalk
1 lb. chicken breast, cut into ½- 1 inch cubes
1 tbsp. flour
1 tsp. dried thyme
1 tbsp dried onion flakes
1 cup skim milk
1/4 tsp. paprika
Directions
1. In a food processor, combine the bread, cheese and black pepper. Pulse until the consistency of coarse crumbs. Preheat the oven to 350 degrees and spray a casserole dish with nonstick cooking spray.
2. Dump out the crumbs, and add the onion and celery, coarsely chopped, into the blender. Pulse until fine.
3. Melt butter in a large skillet. Saute the onion and celery until softened, about 5 minutes. Add the chicken, sprinkle with flour, thyme and salt. Cook for 5 minutes. Stir in the milk and cook, stirring frequently, until sauce thickens - about 3 minutes. Remove from the heat and let stand 5-10 minutes, or until the baby stops crying, so it has time to thicken.
4. Transfer to casserole dish and top with breadcrumb mixture. Sprinkle paprika on top.
5. Bake, uncovered, until golden brown, 30-35 minutes.
